Whether you are gluten-free or not, this pie tastes incredibly yummy and you would never know the difference. The fresh squeezed key lime juice in this pie gives it the unique flavor of an American summer.
place the crackers into a large ziplock bag and crush them by rolling over the bag with a rolling pin
then mix all the ingredients in a bowl with your hands
finally press the mixture into a pie pan
heat oven to 350° F before starting to prepare the filling
grate the 2 tsps of lime zest
slice the limes in half so you can squeeze out the 4 ounces of lime juice (4 ounces are about 1/2 cup)
mix the sweetened condensed milk with the egg yolks, lime juice and zest in a mixing bowl with a hand mixer to get it all smooth and creamy
pour filling into the pie crust and smooth out the edges so the filling is even
bake it for only 10 minutes
let it get completely cold in the refrigerator
You can serve the chilled slice of pie with some fresh whipped cream and garnish with a sliver of fresh key lime. Enjoy!
