Ingredients

Gluten Free Pie Crust Ingredients

  • 2 cups Schar gluten-free honeygrams
  • 1/2 cup softened butter
  • 2 tbsps sugar
  • 1 pinch nutmeg

Key Lime Pie Filling Ingredients

  • 4 ounces freshly squeezed key lime juice
  • 1 can sweetened condensed milk
  • 3 egg yolks
  • 2 tsps grated lime peel zest

  1. place the crackers into a large ziplock bag and crush them by rolling over the bag with a rolling pin

  2. then mix all the ingredients in a bowl with your hands

  3. finally press the mixture into a pie pan

Key Lime Pie Filling Instructions

  1. heat oven to 350° F before starting to prepare the filling

  2. grate the 2 tsps of lime zest

  3. slice the limes in half so you can squeeze out the 4 ounces of lime juice (4 ounces are about 1/2 cup)

  4. mix the sweetened condensed milk with the egg yolks, lime juice and zest in a mixing bowl with a hand mixer to get it all smooth and creamy

  5. pour filling into the pie crust and smooth out the edges so the filling is even

  6. bake it for only 10 minutes

  7. let it get completely cold in the refrigerator 

Recipe Notes

You can serve the chilled slice of pie with some fresh whipped cream and garnish with a sliver of fresh key lime. Enjoy!
